"I developed this for my Weight Watchers diet. I found the recipes calling for 1 can of pumpkin and 1 cake mix were too stiff and dry, so I tinkered around with it."

  • Pre heat Oven to 350.
  • Mix all ingredients in bowl.
  • Spray muffin tins with cooking spray.
  • Fill tins 3/4 full.
  • Bake 20 Minutes.

  1. Great recipe! I substituted 2 eggs and regular chocolate pudding mix. This still keeps the recipe much lower in fat and calories than many others. I baked the cakes in a mini bundt pan for about 24 minutes. Easy and delicious!

I used to collect cookbooks, but I've given away all but my most cherished ones which belonged to my Grandma. I shop at an Amish community for my dry goods as much as possible.
