Chocolate Tofu Mousse

  • Combine tofu, cocoa powder, and pudding mix into blender (I prefer my magic bullet with the short cup and cross blade). Add just enough milk so that the mixture blends without any chunks of tofu, but not so much that it becomes soupy. Mousse should be thick, creamy and fluffy. Transfer to glass and add whipped cream (optional) and whisk to make it extra fluffy. Enjoy!

I'm a sophomore in college who took up baking when I left home for my freshman year. I also enjoy cooking, but prefer baking healthy recipes with low fat and low sugar.
