Chocolate Truffle Cookies

"I found this in a Betty Crocker cookie book. It is like a chocolate shortbread cookie molded around a truffle with glaze on the top. Sound yummy? It is! It's a bit more labor intensive than a simple drop cookie, but it is SO worth it. I made it for Christmas, but, honestly, any time of the year is great for this cookie. NOTE: Prep time includes freezing time."

  • TRUFFLE CENTER

  • 6 ounces unsweetened baking chocolate, cut up
  • 2 tablespoons butter
  • 13 cup half-and-half
  • 12 cup powdered sugar
  • COOKIE DOUGH

  • 12 cup butter, softened
  • 34 cup powdered sugar
  • 1 tablespoon vanilla
  • 1 ounce unsweetened baking chocolate, melted and cooled
  • 1 12 cups all purpose flour
  • 18 teaspoon salt
  • WHITE ICING

  • 1 cup confectioner's sugar
  • 1 12 tablespoons milk (about)
  • CHOCOLATE ICING

  • 1 cup confectioner's sugar
  • 2 tablespoons milk (about)
  • 1 teaspoon vanilla
  • 1 ounce unsweetened baking chocolate, melted and cool

  • Melt 6 ounces unsweetened chocolate in a pan over low heat, stirring frequently.
  • Remove from heat and stir in 2 tablespoons butter, the half and half, and 1/2 cup confectioner's sugar. Let cool.
  • Shape mixture into 1 inch balls. Place on ungreased cookie sheet and freeze uncovered for about 30 minutes.
  • Beat 1/2 cup butter, 3/4 cup confectioner's sugar, vanilla and 1 ounce melted chocolate with a mixer on medium speed.
  • Stir in flour and salt until dough holds together. If dough seems dry, add a bit of milk.
  • Mold portions of cookie dough around frozen chocolate balls to form 1 1/2 inch balls.
  • Place an inch apart on an ungreased cookie sheet. Bake at 350º for 12 to 15 minutes until set. Cool completely on a wire rack.
  • Make white icing and chocolate icing with ingredients above.
  • Spoon white icing over half the cookies and chocolate icing over the other half. Reserve a bit of each icing. Let icing spread and set.
  • Drizzle white icing over chocolate iced cookies and chocolate icing over white ices cookies. Let set completely.

I am a transplanted NYer living in SoCal since 1983. I have really begun to miss weather and seasons. I have been a special education teacher for 27 years. I have 2 sons, ages 14 and 15 so food is a priority in our house. We have 2 cats and an extremely energetic 7 month old boxer/pit bull mix. I love to read. I have really begun to love to cook and have gotten pretty good. I enjoy this site so much and actually miss browsing when I don't have the time. My boys are both great athletes, so sports are big in our house. I am a die-hard Yankee fan as well as a fanatic Steelers fan.
