Chocolate Zucchini Muffins

"I found this recipe on Allrecipes. It is so delicious! Perhaps not for those on a low-fat diet, but all in all, pretty good for you. Moist, chocolate-y and so good. My husband hates zucchini, but he will eat these. Prep time does not include shredding zucchini. At the advice of a reviewer, I am posting this note. If you find that the cocoa will clump if you mix it with the vanilla and zucchini, you can add it instead with the flour and other dry ingredients. Enjoy!"

  • Preheat oven to 350 degrees F.
  • Lightly grease two 12 cup muffin tins with shortening or line with paper cups.
  • In a large bowl, beat eggs.
  • Beat in sugar and oil.
  • Add cocoa, vanilla, zucchini, and stir well.
  • Stir in flour, baking soda, baking powder, salt and spices.
  • Mix just until moist.
  • Pour batter into prepared muffin tins until 2/3 full.
  • Bake at 350 for 20-25 minutes.
  • Remove from pan and cool on a wire rack.
  • Store loosely covered.

  1. I followed someone else's advice and put chocolate chips in these and they were SO yummy! I also substituted 1/2 the oil with unsweetened applesauce and 1/4 of the flour with wheat flour. I'll definitely make them again
     
  2. With 10 zucchini in the refrigerator I wanted to get rid of a few in a batch of muffins. These are really great tasting and have a nice texture, especially the crispy tops. Next time I will use paper liners because even though I greased non-stick pans, boy did they stick! I followed the recipe exactly except I forgot the vanilla and only had two eggs so I added a quarter cup of sourdough starter. Oh, and I made 18 good sized muffins.
     
  3. I used 1/2 oil and 1/2 applesauce then added mini chocolate chips. Pretty good muffin and I will make it again, but punch of the cocoa flavor some more.
     
  4. I followed the recipe like Mandave suggested adding 1/2 cup oil, 1/2 cup apple sauce, then varied with 3/4 cup chocolate chips and used raw sugar instead of white sugar, used 2 1/2 cups of zucchini and 1/2 cup extra of flour. The mixture made 24 muffins. I will be making these again super moist and so delicious. Bronwyn

Tweaks

  1. Half cup applesauce and half cup of veg oil in place of cup of oil. No cinnamon nor cardamon. Added mini chocolate chips.

<p>I live in TN with a husband, 9 year old, 6 year old, and our two dogs. I'm a busy mom who loves to cook for family and friends. We have two boys, and they are the light of my life! My husband is a restaurant manager. We actually met while working together at Bob Evans in another city. He was one cute grill cook!! Now he is one cute manager, and I am so proud of him! He currently works for El Chico, and he is very happy there. <br />I am a stay at home mom who sometimes does temp work, which is a big change from corporate America. We'll see how that goes. Now that I have some more time, I plan to get back to the kind of cooking I used to do. You know...with pots and pans instead of a take out menu. I love to crochet, garden and hike with the family.
