  1. This is even better if let to stand chilled for a few hours. I used 1 large tomato, 2 lebanese cucumbers, 1 green pepper, 1 red pepper, 1 bunch green ononions, parsley, chives, red wine vinegar, and added a little left over raw cauliflower I had. Very refreshing, versatile, and easy.
     
  2. Had this last night with Beef and Onions in Barbecue Sauce, really good! Used a red pepper, red onion,two cups of tomatoes also used balsamic vinegar and a splash of extra virgin olive oil. We both enjoyed it very much!I'm going to drain the dressing off the leftovers and put the leftovers on a roast chicken sandwich for my lunch today!
     
  3. What a great way to get my veggies!I halved the recipe and added just a touch more sugar. It was lovely. Then later I added about 1 tbls. of mayonaise. That was good too. I ended up eating the whole salad myself!
     
  4. This makes a nice side salad. We thought the proportion of tomato was a little too high as it overpowered the rest. We would also have liked it a little sweeter, but it makes a nice basic vegetable salad.

(As many of you know Silent Cricket passed away on Feb. 29. Since she loved Recipezaar so much and so many on Recipezaar have shown their love for her, and have enjoyed her recipes, her personal information will remain here indefinitely just as she wrote it. Her lines at the end of this section sound somewhat prophetic as the last chapter of her earthly existence has been written.) Well, the time has come for me to change my users' name. After being, "OzCoMartha" because of having lived for three years in Australia and then moving to Colorado, I have decided to "turn over a new leaf." I chose this name because many moons ago I used to be able to "chirp" like a cricket and the "silent" refers to the present time when I'm taking a break...But, perhaps after a season, however long I decide that needs to be, I may be back and then I will fill in more details about myself...
