Chorizo, Bean and Butternut Squash Chilli

  • Heat the oil in a large pot and cook the onion and garlic for a few minutes.
  • Add the chorizo and red chilli and cook for another 1-2 minutes.
  • Add the tomatoes, sugar, pepper and 150ml cold water. Cover and simmer for 10 minutes.
  • Stir in the squash, cover and simmer for 45 minutes, stirring occasionally.
  • Add the beans last and cook for a final 5 minutes.
  • Stir in the parsley and serve.

  1. Oh MAN this was good. I used 2 sweet potatoes instead of squash because that's what I had around. I was afraid they'd take too long to cook so I peeled and cut them in half and roasted them under the broiler while I was chopping up the other ingredients. I later made the recipe again with butternut squash and it was good too, the sweet potatoes gave it a slightly different flavor and texture. I followed MarieAlice's suggestion and put grated cheddar on top which complemented the flavors nicely. I got a bunch of requests for the recipe when I brought it to a potluck. Thanks so much, it's definitely a make again!
     
  2. I made this for a chili cook off, and it wasn't too popular with the general masses. I did think it had nice spice and flavor, but I felt like the butternut squash never quite blended with the other flavors or textures. Sorry.
     
  3. My husband and I enjoyed this delicious chilli very much. It was very easy to put together and used things that I quite often have in my larder. It had a wonderful flavour without being overly spicy. I took liberties and sprinkled some grated cheddar on top for serving, but that is a personal preference, but it went quite well. Also when I went to get my can of beans from the larder I found I didn't have any canellini beans so I used a can of mixed chilli beans instead with great success. Thanks for a new favourite!

This is a picture of me and my husband in Portugal, climbing up above the clouds with our bikes. Our trip may take several years so if it's urgent, it's probably better for you to post in the forums ;) Good food is really important to me -- I am happy to pay extra for food that I feel is produced in a sustainable and ethical way and always try to eat using seasonal produce. When we were in the UK we rarely shopped at supermarkets, trying instead to favour small producers, although we were very lucky in that we lived in London and there was lots of choice. We also were fortunate enough to have a weekly organic veg box delivered to our door, filled with so many lovely vegetables for very little money. It really opened my horizons in terms of the variety of vegetables I eat. If you're in the UK, check out Riverford for a box supplier as they're amazing!
