  • Preheat oven to 375.
  • Pound breasts.
  • Sprinkle with salt/pepper and herbs.
  • Place each one on foil or parchment paper square.
  • Chop and mix remaining ingredients in a bowl.
  • Stuff chicken with mixture.
  • Stuff a handful of baby spinach in each breast.
  • Poured some lemon juice and some of the olive juice over the chicken
  • Wrap up breast in foil/parchment square
  • Place in baking dish and bake 20-23 minutes.
  • Enjoy over rice -- tasty!

  1. I made this exactly as posted, except I didn't know if I should drain the canned tomatoes (I used fire-roasted), so I didn't. Even though my chicken breasts were rather large, I did have leftover stuffing mixture. The chicken cooked up very nicely and, overall, it was quite tasty. However, it wasn't as visually appealing as it tasted. The color of the chicken was white and pale. I think maybe baking this outside of the foil packets for some of the cooking time might give it a little color, or even a quick run under the broiler. Thanks for posting this one! Made for Spring PAC 2009.
