  • 14 cup butter, melted
  • 34 cup sugar
  • 2 eggs, beaten
  • 1 14 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup eggnog
  • 12 cup chopped pecans
  • 12 cup raisins
  • 12 cup chopped candied red cherries or 1/2 cup green glazed cherries (or both)

directions

  • In lg bowl mix butter, sugar and eggs well.
  • Combine flour, baking powder and salt.
  • Stir into butter mixture alternately with eggnog.
  • Mix only until moistened.
  • Fold in pecans, raisins and cherries.
  • Spoon into greased loaf pan.
  • Bake at 350* for 70 minutes, or until bread tests done.

  2. This bread did come out beautiful and moist! However, I thought it lacked in flavor. I was really hoping for a bread that tasted a lot like eggnog and I don't think this delivered it. MPO.. I gave it two stars for very easy preparation..
     
  3. I had my husband make this for me because I am not a baker. I don't even like to make pancakes. Something about having to deal with flour. Anyways, this was pretty good. We used walnuts and used those cherries that you put on top of ice cream.
     
  4. Wowee.... I made this recipe exactly... however I used the large, paper muffin tin liners.. and made 'cupcakes' (for the lack of a better word). I only added 1/2 cup of chopped red glazed cherries. They are fabulous! However, what am I gonna do until next year 'Eggnog' season??? Darn! will sure miss these yummy cupcakes.   5. I made this and used the baked bread/cake to make an eggnog trifle. It was wonderful. The crumbs left over were great on their own too. Thanks so much for posting.

Tweaks

  1. I made this without the pecans, raisins, and cherries. I used part lowfat eggnog and part Silk Nog (because that's what I had), and replaced 1/2 c of the flour with whole wheat flour. Delish!!

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!! I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch. We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
