Christmas Rum Pie

- 1 tablespoon unflavored gelatin
- 1⁄4 cup cold water
- 1⁄2 cup sugar
- 1⁄2 teaspoon salt
- 1 1⁄4 cups milk
- 3 egg yolks
- 2 teaspoons rum extract
- 1 cup cream, whipped or 1 cup Cool Whip
- 3 egg whites
- 1⁄2 cup sugar
- 1⁄4 teaspoon cream of tartar
- 2 pre baked pie crusts
directions
- Dissolve gelatin in cold water.
- Cook Sugar, salt and milk over low heat just until it coats a spoon. Mixture will be thin.
- Pour over slightly beaten egg yolk, add gelatin, mix well and cool by placing in cold water bath.
- While the mixture is cooling, beat egg whites with sugar and cream of tartar until stiff.
- After mixture has cooled, add rum extract, cool whip and beaten egg whites, stirring thoroughly. Pour into prebaked pie shells.
- Sprinkle with nutmeg and refrigerate.
