  • Mix together, reserving 2 tablespoons of the strawberry jello powder.
  • Chill the mixture.
  • Shape into strawberries,roll in the reserved jello powder.
  • With the green icing, make a"hull" at the tip of the strawberries.
  • Chill until firm.

I have been making an almost exact same recipe for about 35 years, but have refined the technique (after picking up hints elsewhere) to include starting with flaked coconut in the food processor, and adding the sweetened condensed milk and jello through the feed tube while processing. This mixes everything effortlessly and uniformly and breaks down the coconut for easy shaping. Also, instead of using icing to make the stems, I put almond flakes or slivers in a jar, add green food colouring, and shake until the "stems" are uniformly green. These are less delicate to pack than the icing stems, and much easier to apply to the strawberries as soon as they are shaped.
     
  2. These are really sweet, but delicious and so pretty. I tried one of these at a grown-up Christmas party when I was six. My mother only let me take one. For more than 30 years, I've searched for a recipe for something I could only remember as "a strawberry made out of sugar. " My parents had no memory of them at all. Thanks for solving the mystery for me!

  4. If you have a sweet tooth, you will love these. They are too sweet for me, but they were a hit with my Mom. I make thses the same way as Sweet Baboo. When forming, I use disposable gloves- the gelatin can stain your fingers. When I was a poor college student, I made thses as Christmas presents. I packaged them in canning jars and they looked great.

  1. Our neighbor used to make these for us every year when we were kids. Rather than frosting, she used to use a sluver of almond dyed green as a stem. And little bits of mint leaf jellies cut up as leaves.
