  • Place everything except roast in a sauce pan with 2 cups of water and bring to a boil.
  • Simmer for 5 minutes, remove from heat and add ice to cool.
  • Once cooled, place Roast and mix in a large pot, add cold water to cover roast, cover pot and place in fridge for 24 to 48 hours.
  • Remove roast, pat dry and cook roast in oven at 350 degrees for approximately 2 hours or until done.
