  1. Heat oil in a large Dutch oven over medium high heat.
  2. Add onion, carrot and garlic; saute for 3 minutes.
  3. Add rice, Italian seasoning, water and whole tomatoes; bring to a boil.
  4. Cover, reduce heat and simmer 20 minutes.
  5. Add zucchini, salt, pepper, spinach and cannellini beans.
  6. Cook an additional 5 minutes.
  7. Ladle into individual soup bowls and sprinkle with Parmesan cheese.
