This soup is delicious and really hits the spot on a cold winter night. My husband really loved it and commented that the soup tastes even better reheated. I would definitely agree with this as we have had it twice for dinner and I have taken some to work for lunch a couple of times. It's nice to have recipes like this that can be made on short notice on things I usually have on hand in the fridge!

I live in Manchester, UK with my fiance and young son. I work at the local hospital in pediatrics and love my job. I also love cooking!! I have a sweet tooth but try and make healthy family meals, I'm not against some lovely treats now and then though :)
