Chunky Shrimp Spread

  • Bring the water to a boil. Add the shrimp and cook 3-5 minutes, just until done.
  • Drain the shrimp well and rinse under cold water. Chill.
  • Peel and devein the cooked shrimp and coarsely chop.
  • Add remaining ingredients except parsley, mixing well. Chill.
  • Garnish the spread with a sprig or two of parsley. Serve with party-size rye or whole wheat bread.

I live in a small (but growing to be very large) town in Oklahoma. I am currently a student, studying library science. I like to cook and eat, play the piano and violin, and train and play with my two dogs. I don't have a single favorite cookbook, but of the ones I use, I like BHG the most.
