Chunky Taco Soup

"This easy taco soup is full of flavor. It tastes even better the second day. Note: If you want it more soupier you can add another small can of tomato sauce."

  • Brown the hamburger or chicken in a large pot then drain the excess grease.
  • Add all the ingredients except the cheese & sour cream. Simmer for 10-15 minutes on medium-low heat.
  • Ladle the soup into bowls then top with sour cream & cheese. Serve with tortilla chips.

  1. Excellent and easy! It was a tad salty for my taste, even omitting the salt and using reduced sodium beans, but not too bad. I did add about a cup of medium Picante sauce, as it seemed too thick and not tomato-y enough. I also added the cheese & sour cream as garnishes, along with some cilantro, rather than cooking them in--I thought it would reheat better that way, plus they helped to cool it a bit. I also used granulated garlic instead of onion powder as I didn't have any. I used Uncle Dan's ranch mix and Lawry's taco seasoning, and I used the beef option. We enjoyed this, and it was very easy and fast to make. I'll make this again--thanks so much for posting, Nasseh! Made for 1-2-3 Hit Wonders tag game.

This was just fabulously delicious!I had to change a few of the ingredients,as they're not available here in the UK.Instead of black beans,I found a tin of mixed beans in spicy tomato sauce (kidney,black,haricot and pinto)and instead of Rotel tomatoes I used a regular tin,but added 3 chopped jalapeno.We also don't have ranch dressing,so I had to omit it completely.I used homemade taco seasoing,and probably added a bit too much,as my DH said that it was quite spicy,but I thought that it was perfect. A really delightful recipe,that we enjoyed very much.This is a winner for me.Thanks Nasseh. Made for 1-2-3 Hit Wonders.
     
  3. I love taco soup and this one hit the spot. I followed the recipe as written, using hamburger. I added extra cheese to the tops of the bowls when serving. Everyone enjoyed it.
     
  4. This is delicious. This soup is flavorful and comforting. I used chicken breasts this time and will try it with ground beef as well when I make it again. Thanks for sharing!
