- 1⁄2 cup butter
- 12 ounces chocolate chips
- 1 lb small marshmallow, colored
- 1 cup nuts, chopped
- 1 teaspoon vanilla
- powdered sugar
directions
- Melt butter and chocolate chips in a large pan over low heat. Cool.
- Add marshmallows, nuts, and vanilla. Mix well.
- Shape into loaves and chill for 1 hour.
- Then sift powdered sugar over loaves and cut into slices of desired thickness.

Easy little treat, these are! It's a fun twist on Rocky Road with the colored marshmallows. I'm a total chocoholic, but I do prefer milk chocolate. As it was not specified in the recipe, I used semi-sweet chips b/c that's what I had on hand. It was good, but next time I'll try it with milk chocolate. I used pecans for the nuts & wasn't sure exactly what shape or size of "loaf" to shape it into. I made two 2-inch diameter rolls or logs. For each I put a third of the mixture in a thick line across the small end of a piece of waxed paper & then rolled it up jelly roll style. Then with the remaining third I lined a bread loaf pan with saran wrap & packed the mixture in. It wasn't enough candy to go much more than an inch or so up the sides of the pan. After chilling I sprinkled with powdered sugar & then sliced each roll & the loaf in 1-inch wide portions. We thought both shapes were cute. The rectangular ones look more like stained glass windows, but the small rounds are easier to eat. They're rich & one or two small ones is plenty at a time. I'm sending some to work with DH in the morning. (That way I know I won't be pigging out on them all day tomorrow!) This recipe was enjoyed during Photo Swap 2008!
