Chuy's Deluxe Tomatillo Sauce

"I love Chuy's restaurant, and everything I order, burritos, enchiladas, or chili rellenos, I order with this sauce! I've even covered cheap, frozen burritos with it, and made them (almost) good! This is a copycat recipe, that's really close! Enjoy!"

  • Blend all ingredients, in blender or food processor.
  • Cover whatever you're cooking generously with this sauce, as it soaks in, as it cooks(but make sure it does cook, on top of your enchiladas, burritos, etc, as it contains raw egg).

  1. I made some adjustments leaving the chillies out and using 2 tsp. of dried cilantro. need to double the recipie for 12 enchiladas though. this was a great success with the whole family.
     
  2. It is a very good sauce, but I'm not sure how much it resembles Chuy's (means I have go to Chuy's again to compare!). However that might have something to do with the changes I made to the recipe; I used about half the amount of green chilies (I didn't have enough) and I used about 1.25 cups of heavy cream.
     
  3. I'm giving this a 3 because it was really good, but I didn't think it was anything like Chuy's. Maybe they changed the recipe since this was posted? This was much creamier than their tomatillo sauce. Hmmm...
     
  4. Awesome sauce - I agree it's close to the Chuy's original. I baked the sauce spread over Recipe #135345 Vegetarian Burritos and highly recommend this combo. It was fantastic!!

I'm a retired teacher, now, whose children have grown up, and abandoned me! ? Rather than cooking huge portions, I'm on the hunt for cooking-for-one ideas, or meals that can be tweaked, to make eating leftovers more varied and exciting. I have a pressure cooker, which I love, and I've been making yogurt, eggs, ribs, etc, in that.
