ingredients
- 1 (4 ounce) can green chilies
- 1 3⁄4 cups canned tomatillos, drained
- 1⁄4 cup cilantro leaf
- 3⁄4 cup heavy cream
- 1 egg
- 1 teaspoon salt
directions
- Blend all ingredients, in blender or food processor.
- Cover whatever you're cooking generously with this sauce, as it soaks in, as it cooks(but make sure it does cook, on top of your enchiladas, burritos, etc, as it contains raw egg).

It is a very good sauce, but I'm not sure how much it resembles Chuy's (means I have go to Chuy's again to compare!). However that might have something to do with the changes I made to the recipe; I used about half the amount of green chilies (I didn't have enough) and I used about 1.25 cups of heavy cream.

I'm a retired teacher, now, whose children have grown up, and abandoned me! ? Rather than cooking huge portions, I'm on the hunt for cooking-for-one ideas, or meals that can be tweaked, to make eating leftovers more varied and exciting. I have a pressure cooker, which I love, and I've been making yogurt, eggs, ribs, etc, in that.
