ingredients
- 1 (14 1/2 ounce) can black beans, drained and rinsed
- 1 (11 ounce) can white shoepeg corn, drained
- 1⁄2 yellow bell pepper, chopped
- 1⁄2 red bell pepper, chopped
- 1⁄2 green bell pepper, chopped
- 1 bunch green onion, chopped (white part and some green)
- 1⁄2 cup fresh cilantro, chopped
- 1⁄4 teaspoon coriander (or more to taste)
- 1⁄2 cup parsley, chopped
- 2 tablespoons olive oil
- 4 tablespoons balsamic vinegar
- salt, Pepper, Cayenne Pepper or Tabasco sauce

- I make the day before an event. It is refreshing :) with the balsamic base. I have put over chicken as well -- and one time I set it out at BBQ and some people scooped it up like a salad and they loved it :).

I spent my summers at my Grandparents Cafe (just outside of Noxon Montana) and just love the taste and smell of home cookin'!! My grandma was an amazing person (my rock!) and she made wonderful meals. Her pies (Huckleberry cream was my favorite-yum!) were out of this world. I love to try new recipes and have a goal of making a great "keepers" cookbook to pass on to my kids. Granted they are 12,10 and 6 - so I have plenty of time to create a masterpiece :) I stumbled on to this site~ wow! I love it!
