  • In a large nonstick skillet, cook the cilantro and garlic in olive oil over medium heat for 1 minute.
  • Add the potatoes; cook until tender and lightly browned.
  • Drain, sprinkle with salt, enjoy.

  1. I like just about anything with cilantro so these were tasty. I didn't use a non-stick skillet, so I had to keep adding a little more olive oil. I threw in the cilantro at the end as I thought it may all disinegrate by the end of the cooking time. There was nothing to drain for me.
     
  2. Barb's recipes are wonderful! These potatoes came to the table with an irresistible crunch on the outside and creamy on the inside, flavored beautifully by the fresh cilantro and garlic. I added the salt while they cooked. Mine sizzled in the skillet for a good 45 minutes at a medium flame. I used 3 lbs. of russet potatoes and everyone loved them. Bravo!
     
  3. These were really good even my picky grandchildren liked them not to mention thier mother that is soooooo picky. They are so easy to make. This one is a keeper.
