- 1 bunch fresh cilantro, chopped
- 1 garlic clove, minced
- 1⁄4 cup olive oil
- 3 lbs potatoes, peeled and cubed
- 1⁄2 teaspoon salt
directions
- In a large nonstick skillet, cook the cilantro and garlic in olive oil over medium heat for 1 minute.
- Add the potatoes; cook until tender and lightly browned.
- Drain, sprinkle with salt, enjoy.

Barb's recipes are wonderful! These potatoes came to the table with an irresistible crunch on the outside and creamy on the inside, flavored beautifully by the fresh cilantro and garlic. I added the salt while they cooked. Mine sizzled in the skillet for a good 45 minutes at a medium flame. I used 3 lbs. of russet potatoes and everyone loved them. Bravo!
