Cilantro when You Need It

- 1 cup packed cilantro leaf
- 1 medium tomatoes, chopped
- 1 garlic clove
directions
- Place ingredients in food processer bowl and process until it has a pesto like consistency. In other words, you don't want it to be cilantro juice.
- Line an ice cube tray with saran wrap and spoon cilantro mixture into tray. When frozen, transfer to a freezer bag or container.
- Wash your ice cube tray otherwise your ice will be cilantro-flavored.
- To thaw a single cube for use in a burrito (or whatever), microwave it for 20 seconds or add it to the frying pan about a minute before you're done cooking.

I haven't used these little cubes of cilantro yet, but love the idea of preserving what usually goes to waste. Cilantro isn't readily available in my small town market, and I hate tossing it when I don't use the portions that I purchased during my trips to "the big city" to stock up. I am hoping that this is a great solution for me. I will return to revise my review after I sample one of the cubes in a recipe.

Books and cooking are my passions...I love cookbooks by default. I will begin working on a Masters in English this coming fall...hopefully I'll still have time to cook! Someday I'd like to be able to publish my own cookbook from my family's recipes, but for now I'm just going to concentrate on getting my degree and becoming a better cook.
