- 1 1⁄2 quarts beef broth or 1 1/2 quarts stock
- 3 lbs lean ground beef
- 3 medium onions, finely chopped
- 3 -5 garlic cloves, minced (or to taste)
- 1 1⁄2 tablespoons chili powder
- 1 1⁄2 teaspoons ground allspice
- 1 1⁄2 teaspoons ground cinnamon
- 1 1⁄2 teaspoons ground cumin
- 3⁄8 teaspoon ground cloves
- 3⁄4 teaspoon red pepper (cayenne)
- 2 tablespoons unsweetened cocoa
- 3⁄4 teaspoon salt
- fresh coarse ground black pepper
- 1 (28 ounce) can tomato sauce
- 1 1⁄2 tablespoons Worcestershire sauce
- 3 tablespoons cider vinegar
directions
- In a large pot over medium-high heat, add beef broth and bring to boil. Crumble raw ground beef in to the broth, breaking up the pieces of meat as it starts to cook.
- simmer for 30 minutes.
- While the beef is cooking, run the onion and garlic through a food processor till it is finely chopped.
- Add onion, garlic, chile powder, allspice, cinnamon, cumin, cloves cayenne pepper, cocoa or chocolate, salt, pepper, tomato sauce, Worcestershire sauce, and cider vinegar.
- Bring back to a simmer and then reduce heat to low, and let simmer, uncovered, approximately 2 hours and the sauce thickens.

I love this recipe! It is literally my go-to when I want Cincinnati chili. I'm originally from Cleveland Ohio and have been to the original Skyline Restaurant down in Cincinnati; this recipe is as close as it comes! Well without being made from dehydrated beef (sorry!). No this is not your "normal" chili nor is it meant to be. Skyline is it's own unique and vaguely greek-inspired deal. My mom used to make it for us growing up and this recipe beats hers. I think boiling the meat rather than browning it really is the key. I usually make 1/3 the recipe and freeze half for a fast week night meal in a few weeks. We always top ours with cheese, onion and kidney beans for a proper 5-way experience. Five stars and Ohioan-Approved.

First, I would like to have given this 3.5 stars, but it doesn't work that way here. I followed the recipe exactly, and it was pretty good for "me" but I knew my family would not like it as much as I did. It definitely is not your normal chili, which is fine. But the flavors do catch you off guard, or at least they did to me, even seeing the spices. Anyway, I did like it, but didn't love it. To make my family enjoy it I added 1 cup of ketchup after it was made. I just stirred it in. And everybody ended up liking it.
