  • Preheat oven to 400°F.
  • Combine first 6 ingredients in a large bowl. Stir in apple, and make a well in center of mixture.
  • Combine buttermilk and next 6 ingredients (buttermilk through egg); stir well with a whisk. Add to flour mixture, stirring just until moist.
  • Spoon batter into 18 muffin cups coated with cooking spray.
  • Combine 3 tablespoons sugar and 2 teaspoons cinnamon; sprinkle evenly over batter.
  • Bake at 400°F for 18 minutes or until done. Remove from pans immediately; cool on a wire rack.

  1. These were great. Very easy. I used gala apples so I reduced the sugar to 1/2 cup. Also used 1/2 cup egg substitute. I will be making these again. I made 6 texas muffins and 24 mini muffins. The taxas muffins cooked in 18 mins and the mini's in 10.
     
  2. These are great. Moist and tasty. I used Splenda, except in the topping (Splenda doesn't work well for toppings.) A good muffin for diabetics with the Splenda. Thanks for posting!
     
  3. Totally delightful muffins. I used all Splenda and just egg whites, all skim milk and got perfect muffins. They have a lovely crust and are light, tender and flavorful on the inside. The small amount of cheese is a very pleasant addition. I minced the apple quite small and I think next time I'll leave it in some what bigger chunks. I consider this a perfect muffins for a diabetic. By using the Splenda the only sugar they contain is what is in the apple and the fat is only 18%. I'm in Heaven!
     
  4. I always keep ricotta cheese in my house, for Italian dishes and baking. The richness and creaminess make every quiche, muffin and breads, such as zucchini and banana, a moist and well held together treat. For these muffins I went with whole milk and made buttermilk by adding vinegar to a and letting it sit for 15 minutes. I used 2 cups of Gala apples and 2 whole large eggs. I like large muffins so I filled a dozen quite full and 6 2/3 full. The result is the very best apple muffins yet, and I’ve made many! Thanks Genius Kit hen. You’re the best!
     
  5. Very good. Even with half white and half whole wheat pastry flour these were light and moist. I used two whole eggs instead of the egg white and didn't sprinkle the cinnamon sugar on top (in a hurry). Will definitely make these again as my whole family enjoyed them very much. Thanks.

Tweaks

  1. these were actually pretty good! about 1/3 of the flour i replaced with whole wheat, I added a bit more apple, applesauce instead of oil, low-fat cottage cheese instead of ricotta (i needed to use it up), skim milk instead of 2%, and skim milk and lemon juice instead of buttermilk (what I had). 2 thumbs up!
