  • In a bowl, combine the flour, 1°C sugar, baking powder, 1 1/2 teaspoons cinnamon and salt.
  • In another bowl, combine the eggs, buttermilk, oil and vanilla; stir into dry ingredients just until smooth.
  • Pour half the batter into a greased 9x5x3-inch loaf pan. In a small bowl, combine the remaining sugar and cinnamon; stir in butter. Drizzle half over batter; cut through with a knife to swirl. Top with remaining batter. Drizzle with remaining cinnamon-sugar mixture; swirl with a knife.
  • Bake at 350° for 55-60 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.

  1. This recipe yields a moist, sweet, and delicious cake. It is also excellent if you sub melted butter for the oil as I did the last time I made it. This recipe is comes together in o time and all the ingredients are pantry staples, so it is perfect for last minute guests and/or hostess gifts.
     
  2. Great recipe! I made mine in three mini loaf pans (5.75x3) and they baked approx 35 minutes. Delicious!!!!!
     
  3. I didn't have buttermilk so I used regular whole milk It came out great! The only thing I would do different is use brown suger with the butter/cinnamon mixture. Other than that, it was great for dessert as well as breakfast with some berries

Tweaks

  1. I changed the cup of buttermilk to a plain cup of yougurt do to missing ingredients (turned out great).
     
  2. I made this recipe dairy-free with some oatmilk and vinegar in lieu of the buttermilk! Turned out delicious.
     
  3. I added walnut chips to the cinnamon,sugar, butter
     
  4. I made the filling chopped overripe pear, crushed graham crackers, pumpkin pie spice and brown sugar. Had some random fruit to get rid of. Turned out amazing.
     
  5. No reason not to give this 5 stars! I did make a couple of changes, but only because of what I had on hand. I used lowfat milk with a little lemon juice instead of buttermilk, and I used almond extract since I was out of vanilla. 55 minutes was perfect and my very picky eaters asked for seconds. Thanks for an easy and kid pleasing recipe!
