Cinnamon Raisin Bars

"Soft, plump raisins layered in a crispy crunchy crust and drizzled with sweet cinnamon icing. My Mom made these yummy bars often over the years. They are absolutely delicious and deceptively easy! Craisins and/or golden raisins make great additions to the standard raisin filling."

directions

  • Combine the raisin filling ingredients in a saucepan and heat over medium heat until the raisins are plump and the liquid has almost completely evaporated (about 10 minutes).
  • While the raisin filling is heating, cream the butter and brown sugar together, mix in the dry ingredients and 1 tablespoon of water (it will be very crumbly).
  • Press half of the mixture (about 2 cups) firmly into the bottom of a greased 9"x13" pan and spread with the raisin filling.
  • Mix 1 tablespoon of water with the remaining crumbs and scatter over the raisin filling.
  • Bake at 350°F for 35 minutes and then cool slightly.
  • Mix together the cinnamon icing, adding enough milk to make a drizzling consistency, drizzle over the top and cut into squares.

  1. An enjoyable recipe indeed! Made this for my Housewarming and got rave reviews. Some compared it to a date square. I think the raisins are a great alternative to dates!

  2. These were pretty darn tasty! I was a little skeptical at first, but I really liked them and so did my neighbors that got cookie trays from me. Thanks so much for sharing your recipe!

  3. Wow. I'm soooooooooo excited I found this recipe. DH invited a herd of people over for a Football Party and I needed to whip up something for the girls in the group that didn't include bacon, meat or beer. I picked this recipe, and am so glad I did! I had to make a few substitutions with what I had on hand: 1) I realized I didn't have any ground cinnamon (Yikes!) so I decided to toss in a cinnamon stick when I cooked the Raisin Filling. Next, I subbed Apple Pie Spice in the icing in place of the cinnamon for the Icing, and quite honestly, if I made these again - I would do the exact same thing b/c it was a great flavor. I also made a bit of extra frosting as I know that I really like that part! It was a perfect fall treat! This recipe is great for the Oatmeal Raisin Lovers who like ooey-gooey poofier raisins. Amazing treat.

  4. Easy to make, dh enjoyed it, great recipe, thinking rum flavoring would be good to add to the raisin filling for an added zip next time. Easy recipe for the oatmeal raisin lovers out there.
