Cinnamon Raisin Soft Pretzels

- 1 ounce active dry yeast
- 1 1⁄2 cups warm water
- 2 tablespoons brown sugar
- 1 teaspoon salt
- 2 cups cake flour
- 3⁄4 cup raisins
- 2 tablespoons baking soda
- 2 cups hot water
- 3 tablespoons butter, melted
- 3⁄4 cup sugar
- 1 teaspoon ground cinnamon
directions
- In large bowl, dissolve yeast in warm water, stir in brown sugar and salt -- add cake flour and stir well.
- add enough all purpose flour to form a soft dough.
- stir in raisins, turn onto floured surface.
- knead till smooth -- about 6-8 minutes.
- place in a greased bowl, turn to grease top.
- cover and let rise at least 40 minutes --
- punch dough down.divide into 14 balls.
- roll each ball into a 15" long rope.
- dissolve baking soda in hot water --
- dip each rope in baking soda water and drain on paper towels.
- form into pretzel shapes, place on greased sheets.
- bake at 400* for 15 minutes --
- combine 3/4 cup sugar and 1 tsp ground cinnamon, brush pretzels with the three tablespoons of butter and dip in cinnamon sugar mixture.

I recently became the snack Mom for my sons Army Cadet troop on Tuesdays. I found your recipe & decided to give it a go; so glad I did.<br/>I used my bread machine on the dough setting; adding 3 cups of all purpose flour. I made a few batches. My sons troop is 35 &, because my son not realizing they were for cadets, ate 6 while I was out of the kitchen. lol I did make them a little smaller. I did half the pretzels with cinnamon sugar and the other half I made into Pizza pretzels. Leaving out the raisins, I mixed up spaghetti sauce with Italian seasoning. I brushed onto pretzels and sprinkled Kraft Parmesan powder & a few pieces of shaved Parmesan on top. This turned out wonderful to satisfy everyone's tastes. My son brought home an empty platter and said they were a huge hit!! Thank you for a keeper in my recipe collection from me & the troop :D

Those Amish know how to make baked goods! A couple of things I "changed". I used 4 1/2 cups of bread flour, and at the end, after the dipping part (I sprinkled the water mixture on, liberally, instead of dipping), I sprinkled on Cinnamon-sugar mixture onto each pretzel so it baked on. I made them smaller and it made 20 or so. They smell wonderful and puffed up beautifully!

I love cooking, and reading Christian fiction..I have 5 grandchildren..4 boys and 1 spoiled granddaughter...I also have a black cocker spaniel named Tobey..who is very spoiled..Love computer games, cross stitch and reading cookbooks..I was diagnosed with Acute Myeloid Leukemia almost a year ago, on September 26, 2005....was in an out of the hospital for 8 months, doing intensive chemo...I am doing well now, thanks for all the prayers...
