Cinnamon-Roasted Apples

- 1⁄4 cup packed light-brown sugar
- 2 tablespoons fresh lemon juice
- 4 gala apples or 4 fuji apples
- 4 cinnamon sticks, plus more for garnish
directions
- Preheat oven to 450.
- In a large bowl, combine sugar, lemon juice, and 1/4 cup water.
- Halve apples and core using a spoon or melon baller. Toss apples in the sugar.
- Arrange apples, skin up in a baking dish then pour sugar over them. Tuck in cinnamon sticks and cover with foil.
- Bake until apples are easily pierced about 15-20 minutes.

This simple apple dessert is very tasty. I served it for dessert last night and it was well received. A couple of people thought that a big scoop of ice cream would have added to it. I used Splenda Brown Blend in half the amount ask for which was just right for our tastes. I did find that my Galas took twice as long as started to reach the perfect soft but still firm baked apple stage. I would make this again.
