- 3⁄4 cup butter
- 1⁄2 cup brown sugar
- 1⁄2 cup sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 3⁄4 cups flour
- 1 1⁄2 teaspoons baking powder
- 1 1⁄2 - 2 cups shredded zucchini
- 1 cup shredded coconut (optional)
- 3⁄4 cup chopped pecans or 3/4 cup walnuts
- 1⁄3 cup raisins

GLAZE
- 1 cup confectioners' sugar
- 2 tablespoons milk
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
directions
- Cream butter, brown sugar, and regular sugar.
- Beat in eggs, both one at a time, and stir in vanilla.
- Mix flour and baking powder, and add to batter.
- Stir in zucchini, coconut, nuts, and raisins.
- Spread in a 9x13 greased pan.
- Bake 350 oven for 40-50 minutes, until golden brown and set.
- Meanwhile, combine all glaze ingredients. Spread on cake when almost cooled.
