- 1⁄2 cup butter, softened
- 2 tablespoons parsley, chopped
- 1 tablespoon lemon juice
- 1 teaspoon onion, minced to taste
- 2 teaspoons lemon rind, grated
- 1⁄4 teaspoon white pepper

- 1⁄2 cup butter
- 1 tablespoon orange juice, frozen concentrate
- 1 teaspoon orange rind, grated
directions
- For either butter: in a small mixing bowl, combine all ingredients. Beat until fluffy & well mixed. Cover & refrigerate for up to 2 weeks.

Made for your Wk 15 Football Pool win, flavored butters are a pers fave & I even have a cookbook devoted to them. Made as written, I used the lemon butter on baked fish. We do not buy frozen juice conc, so I used the orange butter atop French toast w/the creative twist of using warmed orange marmalade mixed w/the butter. Both were delicious! Thx for these recipes & Congrats on your FP win. :-)
