Citrus Chicken

"This recipe came from a little card in my local grocery store. I just made it and thought it would be nice to share. Great summer flavors! It is flavorful and would grill very well for a lighter alternative to BBQ during a cook out."

directions

  • Create the marinade for your chicken by mixing your orange juice, lemon juice, salt to taste, cumin, red pepper, garlic and oregano.
  • Marinate chicken for up to 6 hours.
  • Preheat your grill to 300-350 degrees f. You'll want to use medium direct heat for you grill pros out there!
  • Remove chicken from marinade, discard left over juices.
  • Grill chicken bone side up for 25-35 minutes. Turn once. Internal temperature should reach 180 degrees F.
  • Let chicken rest on a platter for about 5 minutes.
  • I recommend serving this with a side of white rice and black beans with just a hint of lime juice.
