  1. In a large bowl, beat together shortening, sugar, and vanilla at medium speed until light and creamy (2-3 minutes).
  2. Add egg, honey, and wine; continue beating until well blended.
  3. In a small bowl, mix together flour, ginger, baking soda, and salt.
  4. Add dry mixture to creamed mixture.
  5. Add all peels and mix until well blended.
  6. Shape dough into a roll about 2-inches in diameter.
  7. Wrap tightly in plastic wrap, and refrigerate overnight or at least for 3 hours.
  8. Preheat oven to 350°F.
  9. Slice dough into 1/8-inch thick rounds.
  10. Place 2 inches apart on ungreased cookie sheets.
  11. Bake until light brown (8 minutes).
  12. Cool on cookie sheets for 4 minutes, then transfer to cooling racks.
