Citrusy Sweet Potatoes

  • Preheat the oven to 400 degrees.
  • Place the sweet potatoes on a large baking sheet and bake until they are just tender. They should be soft, but not mushy. Set them aside to cool before peeling and slicing them.
  • To prepare the sauce, in a heavy saucepan, melt the butter. Add the cider, orange juice, orange zest, spices and sugar. Heat the mixture to steaming.
  • Add the apples and raisins. Cook them gently in the liquid until the apples are tender and the juices are just slightly thickened and somewhat reduced.
  • Spray a 13 X 9 inch baking dish with non-stick spray.
  • Preheat the oven to 350 degrees.
  • Peel and slice the sweet potatoes into 1/2 inch rounds. Place half of the potato slices in the bottom of the prepared dish. Cover them with half the sauce.
  • Cover and bake until the potatoes are hot, about 45 minutes to one hour. Remove the cover after 30 minutes.
  • If desired, baste the sweet potatoes with the sauce during baking.
