Civilized Barbacoa (Smoked Chuck Roast)

  • Blend the spices.
  • Rinse and dry the chuck roast and rub with the blended spices.
  • Prepare the smoker with lighted charcoal
  • Add a small amount of hickory or desired smoke wood.
  • Heat smoker to 250F-300°F.
  • Place the roast on the smoker.
  • Once the internal temperature is 160 F (about 4 hours), wrap the roast in heavy duty aluminum foil.
  • Cook for a couple of more hours or until the meat internal temperature is about 200°F.
  • Pull the roast, drain liquid, rewrap and let it rest for 30 minutes.
  • Using forks, pull the meat apart into shreds.
  • Serve with tortillas and guacamole, pico gallo, or black bean and corn salsa.

  1. It's fair. Not near as good as real barbacoa.but that wouldn't be civilized
     
  2. I made this in a crockpot as it was a little cold outside for the smoker. Added some hickory smoke flavoring to the mix to mimic smoking, but you just can't beat the real thing. It was good, but I wouldn't use the crockpot method again.
     
  3. This was excellent, followed instructions exactly. Used it to make beef and beans burritos and got rave reviews. Thank you for posting.

My wife and I live just outside of Atlanta, GA. Two daughters live in town, one with my two grandsons. My son is living in California. I'm a retired environmental manager at a manufacturing facility. My Mom and Dad would have loved this site. Dad was a huge collector of recipes and was in the food industry. Mom was a terrific cook as well. Another influence was a roommate at the Universtiy of Arkansas that was an excellent cook. Today I enjoy barbecuing and grilling year round and cooking in general. My latest adventure is in bread baking. I'm loving it and going to school on it right here on the bread forum. I'm active in a terrific church and also love fly fishing and fly tying.
