  • Preheat oven to 375 degrees. Using 1 tablespoon olive oil, spread oil around bottom and sides of a deep dish 9-inch casserole pan. In medium size mixing bowl combine hash brown potato , onion and 1 beaten egg, mix well. Press and pat mixture in the prepared pan. Bake in a 375 degree oven for 15 minutes, then brush with olive oil and bake for 15 minutes more.Remove from oven.
  • While crust is baking, prepare the filling. In a medium skillet saute the bacon,onion and garlic in remaining olive oil until soft add the spinach, red pepper, cauliflower, thyme and salt. cover and simmer for 10 Minutes.
  • In a small bowl beat 2 eggs with milk .
  • To build pie sprinkle ½ cup goat cheese , ½ cheddar over potato crust, then the add vegetables, then the rest of cheese. Pour the egg and milk mixture over the top. Bake in a 400 degree oven for 35 to 40 Minutes. Slice and serve warm.
