Classic, Simple and Yummy Meatloaf

"This recipe is one that my grandmother used to play around with that I love to play around with as well! Sometimes it works well with mashed potatoes with dill, peas, etc.--lots of possibilities! This recipe originated from an old 1966 Woman's Day Encyclopedia. Leftovers are great cold in a sandwich or alone. Hope you like it! Try it with turkey too! It tastes just as great! I love it!"

  • Mix all ingredients except bacon together thoroughly, using your hands or an electric mixer.
  • Pack into a lightly greased loaf pan, or form into a loaf on a baking sheet.
  • Top with bacon (optional; if you choose not to, do not forget to baste occasionally with water, bouillon, or equal parts melted butter and wine).
  • Bake in preheated oven at 350°F for an hour or until the loaf shrinks from the sides of the pan (you can also use a toothpick, but remember that doesn't always work).
  • Serve with or without a sauce such as mushrooms, tomato, or sour cream.
  • Enjoy! =).

  1. Well, this was the best basic recipe for meatloaf I could possibly ask for! It really made it easy to "play around" with! I ended up using ground turkey, and added bell peppers yellow, red and green as well as onion. I did use the panko as well instead of regular breadcrumbs and it was fantastic, not dry or bland. Thanks for the base and the inspiration!
     
  2. While it is simple, I have to say it is kind of boring and not moist enough. I wouldn't make it again.
     
  3. Early same day as discovered, DH said we haven't had meatloaf for a long time. There are 2 of us, and I find most leftovers dry and tasteless. SO--I took the basic and "played around" with it !The local grocery had 1 pound packages of meatloaf mix (ground beef, pork, and veal), so since I just wanted to halve the recipe, started with that, and 1/2 of all ingredients listed. THEN -- I added 1/2 tsp. Greek seasoning, 1 Tbsp. Taco mix, and about 1 cup of grated sharp cheddar. Shaped it in a larger casserole dish, added the bacon on top, and baked at 350, along with 2 russet potatoes. We ate almost the whole thing -- maybe a little for sandwiches for lunch. It was very tasty -- even if I strayed FAR away from posted recipe. Thanks for the inspiration, #376418 - it got us away from "the usual".
