- salt and white pepper, to taste
- 1 ounce red wine vinegar
- 1⁄2 ounce Dijon mustard
- 5 ounces vegetable oil
- 2 garlic cloves, minced
- 1⁄8 cup fresh chervil or 1/8 cup fresh parsley, minced
- 2 shallots, minced
directions
- Dissolve the salt and pepper in the vinegar and whisk in the Dijon mustard.
- Gradually incorporate the oil in a steady stream, whisking continuously until thick.
- Mix in the chopped garlic, chervil and shallots.
