- 1⁄2 cup organic whole wheat flour
- 1⁄2 cup organic unbleached flour
- 1⁄4 teaspoon baking soda
- 1⁄4 teaspoon sea salt
- 8 tablespoons coconut oil or 8 tablespoons organic butter, softened
- 2⁄3 cup sucanat or 2/3 cup demerara sugar
- 1⁄3 cup organic sugar
- 1 organic egg
- 1 organic egg yolk
- 1 teaspoon organic pure vanilla extract
- 1 cup semisweet chocolate, chopped
directions
- Preheat oven to 325 degrees.
- 1. In a large bowl beat coconut oil or butter for a minute.
- 2. Add sucanat or demerara and beat until combined and fluffy .
- 3. Add eggs and vanilla.
- 4. In a medium bowl combine flour, salt, and soda.
- 5. Add dry to wet in 2 batches combining with mixer.
- 6. Fold in chopped chocolate.
- 7. Drop cookie dough on cookie sheet and slightly roll with hands into flattened balls. I do 6 to a sheet.
- 8. Bake for 14-17 minutes.
- 9. Chill bowl of dough in refrigerator in between batches. This dough is better cooled.
- 10. Let cool on sheet for a couple minutes then transfer to wire reack or paper towels to finish cooling.
