  • Preheat oven to 325 degrees.
  • 1. In a large bowl beat coconut oil or butter for a minute.
  • 2. Add sucanat or demerara and beat until combined and fluffy .
  • 3. Add eggs and vanilla.
  • 4. In a medium bowl combine flour, salt, and soda.
  • 5. Add dry to wet in 2 batches combining with mixer.
  • 6. Fold in chopped chocolate.
  • 7. Drop cookie dough on cookie sheet and slightly roll with hands into flattened balls. I do 6 to a sheet.
  • 8. Bake for 14-17 minutes.
  • 9. Chill bowl of dough in refrigerator in between batches. This dough is better cooled.
  • 10. Let cool on sheet for a couple minutes then transfer to wire reack or paper towels to finish cooling.
