  • 1 slightly beaten egg white
  • 1 teaspoon water
  • 1 cup dry roasted peanuts
  • 12 cup unblanched whole almonds
  • 12 1/2 cup pecans or 1/2 cup cashews (pecans and cashews are the best)
  • 34 cup sugar
  • 34 tablespoon pumpkin pie spice
  • 34 teaspoon salt

directions

  • Combine egg white and water in large freezer bag.
  • Add nuts and coat.
  • Combine sugar, spice and salt in separate bowl.
  • Add to nuts and toss until well coated.
  • Place on greased baking sheet, spread in single layer.
  • Bake 300 degrees for 20 minutes.
  • Remove and cool on wax paper.
  • Break into small pieces and store in jar or tin.

  2. Super easy and quick to make. Much better than the candy bar and chips or pretzels that I can grab on the run. Going to double the batch next time to have some extra. :) Thank you! ps- added some raisins in for a bit of different texture to 1/2 the bowl. what a versatile mix.

I'm an elementary teacher. My husband and I are currently on a healthy diet that is becoming our life style. Over the years, I have collected some pretty great recipes and have always shared them with anyone who wanted them after all, that's how I came across them. My family has been in food service one way or another for three generations (I became a teacher because food service requires huge amounts of personal time.) I love to cook (even the fattening stuff), garden, read and quilt. My two grown up kids like to bring their college friends home for meals - so I guess that means I'm a good cook. It has become my goal to be able to cook healthy well enough that most people won't know its good for you.
