Cocoa-banana Bran Muffins

"Got this one from Kellogg's about 8 years ago. If you prefer, you can use all mashed banana rather than one mashed and one sliced. I've also tried adding 1/2 cup of chocolate chips to make this a real treat"

  • Preheat oven to 400F and lightly grease muffin tin.
  • Set aside.
  • Peel bananas; mash one and slice the other.
  • Set aside.
  • Stir together flour, sugar, cocoa, baking powder, baking soda, and salt.
  • Set aside.
  • In a large mixing bowl, combine cereal and milk.
  • Let stand 2-3 minutes or until cereal is softened.
  • Add egg, margarine and mashed bananas.
  • Mix well.
  • Mix in sliced banana.
  • Add the flour mixture, stirring just until combined.
  • Portion into muffin tins evenly.
  • Bake for 20-22 minutes, or until tops spring back when lightly touched.

  1. these turned out ok. i liked the sliced banana in them. my only complaint is that the cooking time seems way off for me. i baked for 30 min. and the bottom half of the muffins are still a bit undercooked. thanks for posting.
     
  2. MMM...tasty and healthy both. I made these with Splenda, and I diced rather than sliced the 2nd banana. Figured these to be 2.5 WW points, so a great treat! I shared them with a WW budy.
