Cocoa-Banana Bran Muffins (For the Diabetic)

"Thanks to Luv4food for posting her fabulous muffin recipe. My husband was recently diagnosed with diabetes so I made a few alterations to help lighten the sugar load. I did take her suggestion to add chocolate chips as the small amount is worth the yummy surprise when eaten."

  • Preheat over to 400f and lightly grease muffin tin or line with paper.
  • Set aside.
  • Peel bananas and mash (or slice one).
  • Set aside.
  • Sift together flour, cocoa, baking powder, baking soda, and salt.
  • Set aside.
  • In a large mixing bowl, combine cereal and milk.
  • Let stand 2-3 minutes or until cereal is softenened.
  • Add egg, fat substitute, and mashed bananas.
  • Mix well.
  • Mix is sliced bananas (if one was sliced).
  • Add the flour mixture, stirring just until combined.
  • Portin into muffin tins evenly.

  1. Didn't think chocolate & bran could go together so well! I used wheat bran for the cereal & applesauce for the puree (didn't have any). I didn't use any choc chips; the banana was a great sweetner! I may add a tad more banana next time but otherwise they were quite yummy!
     
  2. These muffins have a good taste. I have made a few things now using Splenda for my husband who has recently been diagnosed diabetic. I find that cooking with Splenda changes the texture of the food and muffins seem "rubbery" It does not seem to change the texture of uncooked desserts. Carol
     
  3. These muffins are very nice. I had to use applesauce as fat replacer and to be honest I'm not sure that the taste and texture was a benifit to this recipe. As it was my sub I certainly do not hold it against the recipe and the result was not bad at all. I just think that it might have been a bit better sans applesauce. Of course, the choco-banana combo is always a winner. I found the texture to be slightly dense but then I took the "Mix Well" instruction to heart and mixed really well. However, they still rose nicely. On the whole I realy like these a lot and I think that with lighter mixing and useing the prune puree ask for that this will be all around tops recipe. I will be making this again.
