Coconut Almond Granola

ingredients
- 5 cups old fashioned oats
- 2⁄3 cup wheat germ
- 1⁄4 cup ground flax seeds
- 1 cup unsweetened dried shredded coconut
- 3⁄4 cup chopped almonds
- 1⁄2 teaspoon salt
- 1 teaspoon almond extract
- 1 1⁄4 teaspoons vanilla extract
- 1⁄4 cup sugar
- 2⁄3 cup honey
- 1⁄2 cup canola oil
- 1⁄2 cup coconut oil (I like Nutiva Organic Coconut Oil)
- 1 tablespoon water
directions
- Combine all ingredients in a large bowl and mix thoroughly.
- Place on a cookie sheet or baking dish, no more than a half an inch deep. You will probably need to divide it up into two batches.
- Bake on the middle rack in a 350 degree oven, for 20-30 minutes, checking and stirring every 5-10 minutes.
- Cool slightly in the pan before transferring into a large bowl, stir every 10-15 minutes as it cools. It will get crunchy as it cools.
- Store in an airtight container for up to 2 weeks.
- 1 serving is 1/2 cup, serve with milk or over yogurt and fruit.

I'm a born and raised city girl who moved to a small town, and love it! I now live in Lexington KY, and I am trying to adjust back to the larger town feel. One good thing...more restaurants! I love to cook, and learned from my father, who passed away 4 years ago. He cooked by throwing things together, and it always tasted great.
