  • Melt butter; add marshmallows, cook and stir until melted.
  • Remove from heat.
  • Add cereal, stir until well coated.
  • With buttered hands, shape into 1 inch balls.
  • Roll in coconut, press gently to coat.

  1. These are a spin-off of your basic Rice Krispies treats. I found at first difficult to form into balls (even with very buttered hands and fingers!--I was washing and re buttering my hands after every couple of balls). What I ended up doing is buttering 9x13 cake pan, sprinkling 1/2 coconut in bottom, pressing down mixture and sprinkling remaining coconut over top. I quickly cut into squares, and then formed balls with squares (with buttered hands) and rolled in coconut again. They were a lot of work for "Rice Krispie treats", but I agree with Inez--the kids will love 'em and will love helping make the balls. I made them for a potluck and they are a lot more appealing to adults than "Rice Krispie treats".

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!! I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch. We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
