Coconut Banana Bread

  • Preheat oven to 350.
  • Spray a 9x5x3" loaf pan with cooking spray.
  • Set aside.
  • Combine the flour, coconut, baking powder, baking soda, salt, and the nuts and cherries (if using).
  • Set aside.
  • In a large bowl, beat the eggs until light and fluffy.
  • Add the sugar and melted butter to the eggs, mixing well.
  • Stir in the bananas and almond extract.
  • Slowly add the flour mixture to the banana mixture, stirring just to combine (don't overmix).
  • Pour into the prepared loaf pan and bake for 1 hour.
  • Remove from oven and let stand for about 10 minutes before removing from pan.

I live in Sugar Land, Texas. I love to try new recipes. My husband jokes that if he likes something, I never make it again for 6 months! My children are very picky, but do have their favorites that I try to include in our menu more often than every 6 months.
