- 1⁄2 lb butter, softened
- 2 cups sugar
- 4 eggs
- 4 teaspoons coconut extract
- 2 cups sour cream
- 2 cups flaked coconut
- 4 cups all-purpose flour
- 2 teaspoons baking powder
- 2 teaspoons baking soda
directions
- Cream together butter and sugar.
- Beat in eggs and extract.
- Add sour cream
- Add the coconut.
- Stir together the flour, baking soda and baking powder.
- Add to the butter mixture.
- Divide between 2 lightly greased
- Bake in a pre heated 350 degree oven for 45 minutes or until bread tests clean when inserted with a toothpick.
