- 2 cups sugar
- 1 cup oil
- 2 teaspoons coconut extract
- 4 eggs
- 1 cup buttermilk
- 3 cups flour
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon baking powder
- 1 cup , shaved nuts make sure they are shaved (your preferance, walnuts, almond...)
- 1 cup coconut flakes
- glaze
- 1 cup sugar
- 1⁄2 cup water
- 2 tablespoons butter
- 1 teaspoon coconut extract
directions
- Mix all ingredients together except for coconut flakes and nuts.
- After mixing ingredients gradually add coconut flakes and nuts.
- Bake at 325 for 45-50 minutes.
- Glaze.
- Add all ingredients into a small pot and let it boil for 10 minutes, it should become a 'syrupy' consistency.
- Poke holes in loaves and pour glaze over your delicious coconut bread.
- let glaze solidify and Enjoy!
