Coconut Cake

  • Preheat oven to 350.
  • While oven is preheating put 1 cup coconut in a pie pan and carefully toast in the oven, stirring occasionally.
  • (It will burn quickly so watch it carefully.).
  • Mix cake mix, eggs, butter and water on medium speed for 2 minutes until mixed well.
  • Stir in 1/2 cup toasted coconut.
  • Pour into greased 13x9 pan.
  • Bake about 33-38 minutes until toothpick inserted in center come out clean.
  • Mix condensed milk with cream of coconut.
  • Remove cake from oven and poke holes all over cake with the handle of a wooden spoon about 1 inch apart.
  • Pour milk/cream of coconut evenly over hot cake.
  • Cool completely.
  • Frost with cool whip.
  • Sprinkle with remaining toasted coconut, coconut and pecans.
  • Refrigerate.

  1. This is the best Coconut Cake I have ever eaten! The first time I made it with both a box of butter pecan cake mix and yellow cake mix and it came out perfect. The other times I made it with just one cake mix which is what I should have done the first time. Either way, this cake is fantastic. I will continue to make this as my coconut cake. Thank you so much for sharing this great recipe. Everyone in my house LOVES it! :)
     
  2. As my DH was eating his 3rd piece of this, he said "I don't like coconut, but you can make this for me anytime." Simply delicious. I chose this recipe out of about 10 or 12 others that I had saved. It's now going in to the keeper file. Great!!!
     
  3. All I have to say is WOW ! I followed the directions exactly although I was a bit skeptical about adding all of that liquid...but did it anyway. It turned out so moist and delicious....hubby kept telling me that I have to make this again real soon. My future daughter-in-law wolfed it down before dinner....so this is a definite keeper ! Thanks so much. I will make this one often !
     
  4. I am not a coconut fan at all, but I made this for a friend for his birthday. Then for another event. I tried a piece and man do I love this cake. Like I said I'm not a fan of coconut, but there's just something about this cake. It is so moist, and yummy, I could eat the whole thing myself. 5 stars from me. Great recipe!!!!!
     
  5. I substituted pineapple juice (from a bottle) for the water and put pineapple slices on top of the cake. It was apparently delicious (I don't like coconut, but everyone else loved it).

<p>Before I get to the details let me tell you how I rate recipes.....and tell you how I feel about others ratings! <br /> <br />5 STARS....This recipe was excellant, we liked it very much, the directions were very clear and if I made any minor substitutions I noted it. It would most likely be made again, many times! <br /> <br />4 STARS....This recipe was good, we liked it but I made changes either in taste or it was not clear in something, but I would consider making it again. <br /> <br />3 STARS....This recipe was not something that got approval from the majority. Either it just didnt work in preparation, directions, or taste. My collection numbers well over 2000 and where as some people go to bed with a good novel, my nightstand is full of cookbooks! <br /> <br />I love to bake and its nothing for me to make 15-20 different kinds of cookies and candies for the holidays. I guess that it has rubbed off on my oldest daughter who is a culinary school graduate and knee deep in pastry classes, hoping to become a pastry chef! <br /> <br />In March of 2002 I had gastric bypass, weight loss surgery and I have lost 125 pounds FOREVER, so now when I do cook it IS for everyone else to enjoy. <br /> <br />I love Zaar and all the friends I have made here, this sight is so addictive but yet so much fun! I know that in the years since Ive been a permanent fixture of this site I have acquired many great recipes and tons of cooks that I am proud to call my friends!
