directions

  • Preheat oven to 325°F Grease and flour a Bundt pan - I used the Pam cooking spray with flour already in it.
  • Place vanilla wafers in a food processor and pulse until you end up with fine crumbs.
  • Combine crumbs with coconut, sugar and pecans in a large bowl; mix.
  • In a medium bowl, whisk eggs, butter and milk together. Pour egg mixture over dry ingredients and mix well; batter will be thick.
  • Pour batter into prepared pan; bake 1 hour and 35 minutes.

  1. This is a great recipe. It does need a whipped topping or glaze. It was so easy and serves a lot as it is rich. I'm going to add candied fruit to it to make it into a fruitcake. I love finding uses for the ingredients I have on hand. Thank you. Carole from Castle Rock.

  2. I made this early this am - it's hot in VA and wanted to get the baking over with early! Anyhow, the cake is good, but we thought it needed more flavor - maybe some coconut or vanilla extract. Because the cake was baked when we discovered this, I made a XXX sugar glaze (orange flavored) and it provided just the perk the cake needed. Actually reminds me now of an orange slice candy cake my dad's sister used to make. Quite good! Next time, I'm going to add dates and orange slice candies-chopped-and see what happens. Thanks for sharing!

I am a married cruise-only travel agent with two stepsons, aged 20 and 25. It took a while to get the boys used to my cooking, as they were raised on fast food and pre-packaged foods (i.e. mac-n-cheese from the blue box, frozen dinners, Chef Boyardee, McDonalds, etc.). My mother is from Spain and I lived there as well as Germany, England and Italy growing up, which influenced both my career and my cuisine!</p> 8726943"
