  1. Sift first three ingredients together; combine egg and milk and add to dry ingredients.
  2. Stir in orange rind and juice; add coconut and mix well.
  3. Preheat oil to 360F; drop batter by spoonfuls into fat and fry until golden.
  4. Drain on paper towels.
  5. Sprinkle with confectioners sugar and serve.
