  • Whisk dry ingredients, stir in all wet until smooth.
  • Stir in nut or whatever you choose.
  • Put in a greased loaf pan
  • Bake at 350 for 50-75 minutes. Cover with foil after 50 minutes.
  • Cool on a rack completely before eating, a must for texture and flavor.

  2. I made this bread tonight for my husband who is diabetic. Can anyone tell me the nutritional values, e.g. Carbs; calories; fats, etc. I haven't learned how to break down a recipe so help is needed. Don't want to compromise his health in preparing dishes that are high in carbs. Thank you for any advice.

  1. Awesome recipe, thank you! I followed bonniedgros's advice and added 1 tsp ACV. It's light, fluffly and moist, not things I usually hear to describe gluten-free banana bread. Additionally, I omitted the nuts and honey and it was still sweet enough for me (being careful with sugars) Being a little less sweet and mild tasting, it will work nice for spreads or as one reader suggested, french toast! Will definitely make again! Thank you :)
     
  2. Thanks for this gluten-free, paleo recipe! I made this for my husband, but he will be lucky if there?s any left for him. I forgot how fabulous good banana bread can be, and I?m a convert to coconut flour, which is perfect in this recipe. I took the advice below and added a tsp of cider vinegar, and I used 3 eggs, and (less) maple syrup instead of honey, so I was guessing a little about the substitutions, but it seems a very forgiving recipe, the hallmark of a household favourite. I mixed the whole thing in the food processor since my bananas weren?t as ripe as they should be for baking, and added of 1/2 cup dark chocolate chips instead of the pecans. I baked it in 4 mini loafs (silicon) and it was done in 50 minutes, super moist, and very tasty. I?m already planning next time to make it with walnuts or pecans.
     
  3. A beautiful recipe. I followed it exactly, except for an addition of 1 tsp of apple cider vinegar. A person wouldn't know that this was grain-free unless told. Fluffy and moist. This will be a regular in our household. We are going to have some for breakfast tomorrow to make banana bread French toast! Thank you so much for this great recipe!
     
  4. A very good banana bread recipe! I just added a bit more coconut flour as it was quite wet (around two table spoons) and used macadamia oil only because I did not have coconut oil, but just bought some, so I am excited to try this recipe again! Also, the bread in my oven only needed 50 mins. It turned out moist and not overly sweet. It was very delicious!

Tweaks

  1. So freaking good, made in bunt pan and was very pretty. Used walnuts instead of pecans and replaced the honey with palm sugar. You cannot tell its coconut flour at all. Everything else I've made with coconut flour seemed grainy. This puffed up and was so moist.

  5. I added a pack of vanilla shakeology to increase protein. It needed more flour so I used the protein powder instead. I also used avocado oil instead of coconut. This bread is amazing!!!!

I live in MI with my family and am always on the lookout for new tasty recipes that even my toddler will like. He loves meat and pasta, most fruit and is getting better about veggies. I cook every meal 7 days a week, with the occasional lunch or dinner out (very occasional!) but I love cooking so it's not a bad thing to me. <br> <br>I am a big sweets eater and recently got an ice cream maker so I have been whipping up lots of ice cream. My favorite so far has been Ben and Jerry's heath bar crunch, it's so creamy and only lasts 2 days in this house! Other baked goods and homemade bread are favorites too, though not much bread gets baked in the summer. <br> <br>I hate doing dishes! We are currently house hunting and a dishwasher is a must (we don't have one right now). Luckily my dh is pretty good about helping out with the dishes :) <br> <br>I know it seems like I give lots of good reviews, but there is a good reason: I know what we like, so I pick dishes I think we will like, and often we do. If i give a review of a recipe with no stars it's because I think I did something wrong usually so that's why it didn't come out right. Or if something has excellent ratings and I don't like it, I don't want to ruin that, because obviously I didn't like something, but that's not a refection of the actual recipe! <br><img src="http://i23.photobucket.com/albums/b399/susied214/permanent%20collection/adoptedspring08.jpg" border="0" alt="Photobucket"> <br> <br>I dislike when people don't make the recipe correctly and give it a bad review.
