- 4 tilapia fillets
- 1 teaspoon salt
- 1⁄2 teaspoon pepper
- 1 shallot, finely chopped
- 1 piece ginger, 1 inch, peeled and grated
- 1 lemon, zest of
- 1 cup coconut milk
- 4 small red potatoes, quartered and sliced into 1/4 -inch pieces
- 1⁄2 lb snow peas

- Preheat oven to 350°F Place the fillets on double layers of parchment paper or aluminum foil. Divide the remaining ingredients equally over the fillets. Roll up packages tightly, place on baking sheet and bake 25 minutes.
