Coconut Milk & Lime Ice Cream

"This is so yummy and refreshing. I came up with the idea after becoming addicted to a coconut & lime rice pudding. The combination of flavors is delicious and feels very Thai. Perfect after a hot curry."

  • Mix beaten eggs with the sugar, zest and lime juice, then add the cream and coconut milk.
  • Follow instructions for ice cream maker and then when at a soft serve consistancy, put in freezer to allow it to firm up.

  1. Failed.?? After 40 min in a Cuisinart Ice cream machine, mixture was as liquid as when I put it in. Not sure what went wrong.

I'm not really one for measuring, and usually just make things up as I go along. My brain tends to shut down at the sight of too many ingredients in a recipe (must be A.D.D. or something) so that's something I'm trying to work on. Most of my recipes are quick and easy to make, since I'm usually trying to get dinner out in a hurry.
